“Healthy” Banana Pancakes

Hello!! I had a banana sitting in my kitchen and it was on the brink of being way to ripe to eat. So I thought I’d transform it into something a little more edible! These are my semi-healthy banana pancakes! I hope you enjoy 🙂 please leave me nice comments and any suggestions!

(this recipe made just enough for 3 medium/large pancakes, please adjust to your circumstances :))

The Pancakes:

  • 1/2 a ripe banana (save the other 1/2)
  • 1 large egg
  • chia seeds (1/2 tbsp)
  • organic milled/ground flax seeds (1/2 tbsp)
  • approx. 1/2 cup of pancake mix (personal choice, go wild!)
  • a splash of almond milk

The Toppings:

  • any fruit!
  • coconut flakes
  • peanut/almond butter
  • maple syrup

How to Cook:

Start by smashing the banana in a bowl. Once smashed up, add all the other ingredients for the pancakes. Cook on medium heat on a flat-top or in a pan until you see bubbles on the raw side of the cake then flip and wait approx 2mins or until golden brown on the other side. (in between flipping I sliced the other 1/2 of the banana and put it on the raw side of the pancakes.) Once cooked, remove from heat, add toppings and enjoy! 🙂
